Flaked Quinoa Porridge

Awesome Andean Bowl

This Mexican-inspired dish is the perfect side to winter soups & stews. Bursting with flavour & packed with colourful vegetables, we think even the fussiest of eaters will enjoy this one. Make ahead to save time!


  • 1x sweet potato, roasted
  • 1x bunch asparagus, chopped
  • 1x corn, off the cob
  • 1x pack mung bean sprouts
  • 1x yellow capsicum, sliced
  • 1x broccoli, cut into florets
  • 1x red onion, thinly sliced
  • 1x clove garlic
  • 2x tomatoes, chopped
  • 1x large carrot, shredded
  • 1x avocado, diced
  • 1 cup pecans*
  • 1 cup currants*
  • ½ cup pepitas*
  • ½ cup sunflower seeds*
  • ½ cup sesame seeds*
  • Handful of baby spinach
  • 1 tub Goodies & Grains Andean mix*
  • 3 tablespoons Goodies & Grains coconut oil*
  • 2 teaspoons Screaming Seeds Piri Piri blend*
  • 2 tablespoons Nuilife Coconut Aminos*
  • 1x 2 egg omelette, thinly sliced

  1. Prepare Andean mix: rinse grains & drain. Bring a large pot of water to the boil, add the Andean mix & cook on a low simmer for 10-15 minutes, until the grains are soft & the husks begin to break away. Drain off & set aside.
  2. Heat up coconut oil a large frypan. Add onions & garlic & cook for a few minutes, until soft. Add the Screaming Seeds spice mix & cook for a further minute, stirring frequently. Mix in the asparagus, capsicum, broccoli, corn & tomatoes. Cook on a medium heat for a few minutes. DON’T OVERCOOK. You want the vegetables to have some crunch. Stir in the coconut aminos & take off the heat.
  3. Transfer the vegetables into a large bowl & add the cooked Andean grain, sliced omelette, mung bean sprouts, avocado, sweet potato, carrot, pepitas, sunflower seeds, sesame seeds, pecans, currants & baby spinach. Mix together with your hands & serve.
