We’ve been working on a GRAIN-FREE CRACKER recipe for a while now & we think we’ve struck gold with this one! Many grain-free crackers contain almond meal, which although gives a good texture, is a little sweet for our palette. The combination of coconut flour, tapioca flour, pesto, herbs & seeds in this recipe makes for a flavoursome savoury cracker, perfect for dipping or enjoying with cheese. We know you’re going to love these!

Ingredients

  • 1 cup Goodies’ coconut flour*
  • 2 cups Bob’s Red Mill tapioca flour + extra for dusting*
  • ¾ cup extra virgin olive oil*
  • ¾ cup filtered water
  • 2 eggs*
  • ½ cup mixed black & white sesame seeds*
  • 2 tablespoons sundried tomato pesto
  • 1 tablespoon Italian herbs*
  • 2 pinches Himalayan salt*
  • Pinch cayenne*

Method

  • Preheat oven to 180°C.
  • Mix together all ingredients in a large bowl. Work mixture into a dough (you may need to add a little more liquid or flour to get the right consistency) and press into a lined baking tray. Sprinkle dough with extra tapioca flour & roll out with a rolling pin. Dust with more flour if dough starts to stick.
  • Bake in oven for 15 mins, or until golden brown. Turn over & bake on the other side for 2-4 mins, until golden brown.
  • Cut into slices & serve immediately!
