Banana Caramel Parfait

Chestnut Mousse

Chestnut mousse is a traditional European Christmas dessert. It is very easy to prepare, light to eat & delicious! Serve in martini glasses for a sophisticated finale Christmas lunch.


  • 1 tin whole peeled chestnuts*
  • 60g butter*
  • 50g sugar*
  • 2 eggs*
  • 150g cream*
  • Pure vanilla essence or vanilla bean (scraped)*

  • Cream butter & sugar in an electric mixer. When the mixture is pale add 2 eggs, then the cream & vanilla.
  • Process the whole chestnuts until they are the consistency of breadcrumbs.
  • Incorporate the ground chestnuts into the butter mixture.
  • Serve in martini glasses for a sophisticated finale to Christmas lunch.
