Overnight Chia Pudding

grain free / gluten free / vegan / paleo / sugar free

In speaking to our customers, there is some concern over BPA in tinned products. One such tinned product that we can’t live without is coconut milk! An easy solution to this is to make your own; it’s super easy! Simply blend sulphur free coconut threads with filtered water in a 1:2 ratio (one part coconut threads to two parts water). This ratio may vary slightly, depending on the type of blender you have (high speed works best!) so have a play around until you find what you prefer. After blending, strain through a fine sieve & there you go: instant coconut milk! No chemicals, no preservatives, no emulsifiers; just coconut & water! Use your homemade coconut milk to make this delicious Overnight Chia Pudding…



Preparation time

15 minutes


  • 2 cups homemade coconut milk*
  • 2 tablespoons Goodies’ almond butter*
  • 1 teaspoon alcohol free vanilla extract*
  • ½ teaspoon ground cinnamon*
  • ¾ cup chia seeds*

*We stock these ingredients


  1. Blend coconut milk, almond butter, vanilla & cinnamon in a high speed blender.
  2. Transfer mixture to a glass jar & stir in the chia seeds.
  3. Seal, put in fridge & leave overnight. Enjoy with seasonal fruit &/or berries, toasted coconut flakes and a drizzle of honey if you like it sweet!

This will keep for a few days in the fridge. Handy to have as a healthy go-to snack at work!
