Flaked Quinoa Porridge

Coconut Banana Piklets

gluten free 
makes: 10 small pikelets      preparation time: 20 minutes    
cooking time: 1-2 minutes per pikelet



  • 3 large organic McGwerriton Eggs*
  • ½ cup Spiral Organic coconut milk*
  • ¼ cup natural almond meal*
  • 1/8 cup Goodies’ organic coconut flour*
  • 1x large ripe banana, mashed
  • 1 tsp Chef’s Choice alcohol free pure vanilla extract*
  • ¼ tsp bicarb of soda*
  • ½ tsp Braggs’ apple cider vinegar*
  • Pinch salt*
  • Coconut oil* – for frying
  • Raspberries – fresh or frozen*
  • Strawberries – halved
  • ½ block your favourite flavour of Pana chocolate*, melted
  • Nuilife coconut nectar*

  • Mix eggs, coconut milk, mashed banana, vanilla & apple cider vinegar together in a small bowl
  • In another bowl mix together almond meal, coconut flour, bicarb & salt
  • Combine wet & dry ingredients & mix well
  • Grease a non-stick frying pan with coconut oil, heat up and add 1/8 cup of the batter (3 or so pikelets should fit on the frypan at one time). Cook for a few minutes until golden underneath, then flip the pikelets & cook for a few minutes more. Continue this step until all batter is used up. You should end up with around 10 small pikelets.
  • Arrange pikelets on a pretty plate; make a circle with the raspberries; put the halved strawberries in the centre. Drizzle the melted Pana chocolate over your creation; do the same with the coconut nectar.
