Curried Cauliflower Nori Wraps

Happy New Year! To kick off 2015 in the best way possible, we're featuring easy, healthy recipes to get you motivated in the kitchen! These CURRIED CAULIFLOWER NORI WRAPS are a sneaky - and tasty! - way to get more veggies into your diet. Fill the wraps with any vegetables you have on hand for a versatile afternoon snack or add protein (omelette strips work well in this) for a more substantial meal. Kids in particular will love these; they'll jump at the chance to get involved, selecting their favourite fillings & helping in the rolling process. Enjoy!


  • 2 organic nori sheets*
  • 4 tablespoons good quality olive or coconut oil*
  • 1/2 head cauliflower, very finely diced (you can do this by hand or in a food processer)
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 tablespoon curry powder*
  • 1 teaspoon turmeric*
  • 1 tablespoon each of sesame seeds, sunflower seeds & pepitas*
  • Generous pinch Himalayan salt*
  • Pinch cayenne (optional)*
  • Veggies of your choice for filling (we chose avocado, capsicum, carrot & alfalfa)
  • Two handfuls of leafy greens

Note: you will need a sushi mat to roll these

  • Heat oil in a heavy-based pan & add onions & garlic. Cook for a few minutes until soft.
  • Add cauliflower & spices. Cook for a few minutes, stirring constantly. Add more oil if necessary to stop the vegetables sticking to the pan.
  • Mix in seeds & take pan off the heat.
  • Leave the curried cauliflower mixture to cool. In the meantime, prepare other vegetables (eg. slice 
  • capsicum, carrot, avocado, etc.)
  • Place one nori wrap on a sushi mat. Tear one handful of leafy greens with your hands & place on the half of the nori wrap closest to you. On top of this add half of the cooled cauliflower mixture & press with your fingers until flat & even. Add other vegetables on top of this. Using your fingers, wet the edge of the nori sheet furthest away from you with warm water. Quickly & firmly wrap the nori sheet using the sushi mat. The damp edge will 'stick', thus sealing the wrap. Repeat with other nori sheet.
  • Cut nori wraps into bite sized pieces using a sharp, serrated knife.
