Festive Coconut Ice Cream Cake

This delightful FESTIVE COCONUT ICE CREAM CAKE will really impress guests this Christmas! It’s so quick & easy to prepare, perfect for this time of year when you don’t have time for more elaborate dishes. Being gluten free, dairy free, grain free & vegan, it is the ultimate dessert for guests with special dietary needs – you could even make this NUT FREE by simply omitting the almonds. We don’t need to tell you it tastes out of this world!


  • 1 tub coconut ice cream, softened (natural flavours work best eg. chocolate, vanilla, etc.) *
  • 1 cup assorted glace fruit, chopped + extra for garnish*
    ½ cup silvered almonds*
  • ¼ cup cacao nibs*
  • 1 cup Loving Earth dark chocolate*

  • Mix the glace fruit, slivered almonds & cacao nibs through the softened coconut ice cream.
  • Line a small bowl with plastic wrap & pour the ice cream mixture in. Put in freezer & let set overnight.
  • Unwrap the ice cream ‘dome’ & set on a plate.
  • Set up a double boiler & melt the Loving Earth chocolate.
  • Gently pour the melted chocolate over the ice cream dome & return to the freezer for about half an hour, until the chocolate is set.
  • Take ice cream cake out of the freezer & garnish with a few pieces of glace fruit. Serve immediately.
