One of our favourite alternative flours to use is BANANA FLOUR. It has a rich earthy, nutty taste and is wonderful in muffins, cakes, bars & in this gorgeous FRUIT & NUT SLICE! Like coconut flour, banana flour sucks up a lot of moisture, so the key to using it is to add plenty of eggs & liquid to create a delicious, moist baked good. You can omit the nuts to make this the perfect school lunchbox treat for the kids!

Ingredients

  • 1 cup banana flour*
  • ¼ cup Goodies & Grains coconut flour*
  • ½ cup sultanas*
  • ½ cup dried apricots*
  • ½ cup organic medjool dates, diced*
  • ½ cup currants*
  • ½ cup pecans, chopped*
  • ½ cup walnuts, chopped*
  • 6 Hoods eggs*
  • 1 ¼ cups Goodies & Grains coconut milk*
  • ½ cup Goodies & Grains coconut oil, melted*
  • ¼ cup honey*
  • 1 tablespoon mesquite*
  • 1 teaspoon vanilla extract*
  • 1 teaspoon baking soda*
  • 1 teaspoon organic apple cider vinegar*
  • Pinch Himalayan salt*

Method

  • Preheat oven to 180°C.
  • Combine the banana flour, coconut flour, sultanas, apricots, dates, currants, pecans, walnuts, mesquite, baking soda & salt in a large bowl. Mix well.
  • In another bowl, whisk together the eggs, coconut milk, melted coconut oil, honey, vanilla extract & apple cider vinegar.
  • Add the wet ingredients in with the dry & fold mixture to combine. Pour into a lined baking tray & bake for 20 minutes, or until the slice is golden & set in the middle.
  • Cut into slices & enjoy!
