Gluten Free Lasagne with Coconut Wraps

Ingredients

  • ¼ cup Goodies & Grains organic cold-pressed coconut oil*
  • 1 brown onion, diced
  • 4 cloves garlic, minced
  • 2 carrots, diced
  • 2 sticks celery, diced
  • 1 teaspoon cayenne pepper (or to taste)*
  • 500g organic grass-fed beef mince
  • 2 cups passata*
  • 1 cup red wine
  • 2-3 sprigs thyme, de-stemmed
  • 1 spring rosemary, de-stemmed
  • 1 handful basil, torn
  • 1 handful baby spinach
  • 3 zucchini, ribboned & blanched
  • 4 coconut wraps*
  • 4 boiled Hood’s eggs, sliced*
  • 1 punnet cherry tomatoes, cut in half
  • Himalayan salt*
  • Pepper*

Method

To make bolognaise:

  • Heat coconut oil in a large saucepan over medium-high heat. Cook onion, garlic, celery & carrot, stirring for 2 minutes. Add a pinch of salt & turn heat down to low; put lid on & let vegetables sweat, stirring regularly. Once soft, remove the lid & add beef mince, cayenne, thyme & rosemary. Cook for about 6 minutes, breaking up the mince with a wooden spoon.
  • Add passata & wine & bring to a simmer. Cook, uncovered, for 20 minutes, until sauce is thick (you may need to add a little filtered water during cooking if the liquid evaporates too quickly).

To assemble:

  • Preheat oven to 180°C.
  • Layer vegetables & bolognaise in a large oven dish in the following order: blanched zucchini strips, 1/3 bolognaise, basil, 2x coconut wraps, 1/3 bolognaise, boiled eggs, baby spinach, 2x coconut wraps, 1/3 bolognaise, cherry tomatoes.
  • Bake in oven for 30 – 40 mins, until soft & cherry tomatoes are starting to blister.
  • Serve & enjoy with good company & a bottle of delicious wine!
