Gluten Free Spiced Apple & Sultana Loaf

This recipe uses one of our favourite gluten free flours: BUCKWHEAT! This pseudocereal is a nutritional powerhouse; rich in minerals such as phosphorus, magnesium, iron, copper & zinc, & high in fibre & protein. Buckwheat has an earthy flavour & combines well with warming spices, like the cinnamon & allspice used in this recipe. We hope you enjoy this SPICED APPLE & SULTANA LOAF! Afternoon tea, anyone?

Ingredients

  • 2 cups Goodies & Grains buckwheat flour*
  • 3 apples, coarsely chopped*
  • ½ cup sultanas*
  • ½ cup Goodies & Grains organic coconut oil*
  • ½ cup Coco Quench*
  • ½ cup maple syrup*
  • 2 whole eggs*
  • 2 teaspoons cinnamon*
  • 1 teaspoon allspice (pimento) *
  • 1 teaspoon vanilla extract*
  • 1 teaspoon baking powder*
  • Juice from 2 lemons
  • Pinch salt*

Method

  1. Preheat oven to 180 degrees celsius.
  2. In a small bowl, mix together the sultanas, apple pieces, half of the cinnamon, the allspice, vanilla extract & lemon juice. Let rest.
  3. In another bowl, whisk together the eggs, coconut oil, Coco Quench & maple syrup.
  4. In a third bowl, mix together buckwheat flour, baking powder, the remaining cinnamon & salt.
  5. Combine all ingredients in a single bowl & stir gently, until you get a smooth batter.
  6. Pour batter into a greased loaf tin & bake in the oven for around 40-45 mins, or until golden on top & set in the middle.
  7. Let cool on a cooling rack.
  8. Cut up & enjoy!
