We’ve had many requests for FRUCTOSE FREE recipes; here’s a quick, easy & delicious one that we hope you’ll enjoy! Simply store the ‘log’ in the freezer & cut off a slice anytime you need a guilt-free sweet treat! Having healthy snack options on hand is a good way to keep on track when trying to reduce your sugar consumption. Make a batch each Sunday and enjoy a guilt free week when that sweet tooth plays up!

Ingredients

  • 1 cup hazelnut meal*
  • 1 cup natural almond meal*
  • 2 cups desiccated coconut*
  • 1 cup coconut threads*
  • 1 cup raw cacao powder*
  • 1 cup Goodies & Grains organic coconut oil*
  • 1 cup Goodies & Grains rice malt syrup (you may want to adjust the quantity to suit your taste) *
  • 1 cup pistachios, roughly chopped*
  • ¼ cup Goodies & Grains freshly ground almond paste*
  • 1 cup rolled quinoa (quinoa flakes)*
  • ½ vanilla pod, seeds scraped*
  • 1 teaspoon ground cinnamon*
  • Generous pinch of salt*

Method

  1. Combine all ingredients in a large bowl. Take time to make sure everything is well incorporated & work the mixture into a dough.
  2. Put the ‘dough’ in the centre of a large piece of plastic wrap. Take up the sides of the wrap & twist to secure, keeping the package as tight as possible. Work the ‘dough’ into a rectangular log shape. Place on a tray and pop into the freezer to set. Wait at least an hour for the log to set before cutting into slices (it’s easier to cut when frozen). Enjoy!
