Flaked Quinoa Porridge

Middle Eastern Millet

Millet is one of our favourite gluten free grains. It has a delicious nutty taste & is a versatile pantry staple! This delicious MIDDLE EASTERN MILLET combines flavoursome spices, nuts, sultanas, goldenberries & herbs to create a beautiful side dish. Add boiled eggs or diced chicken to make a filling main for the whole family!

Ingredients

  • 2 cups hulled millet*
  • 2 Massel stock cubes*
  • 1 cauliflower, cut into chunks
  • ½ pumpkin, coarsely diced & roasted
  • ½ red onion, sliced
  • 1 cup pistachios (shelled)*
  • 1 cup slivered almonds*
  • 1 cup sultanas*
  • 1 cup goldenberries*
  • 2 teaspoons ground turmeric*
  • 2 tablespoons mild curry powder*
  • 2 tablespoons Screaming Seeds Marrakesh Magic seasoning*
  • 1 bunch parsley, finely chopped
  • olive oil*
  • Himalayan salt

Method

  1. Preheat oven to 180°C.
  2. Cook millet in a rice cooker (1 part millet to 2 parts water – add the stock cubes in with the millet). Set aside to cool slightly.
  3. Put cauliflower in a baking tray & add turmeric, curry power, olive oil & salt to taste. Mix with clean hands so that the cauliflower chunks are evenly coated. Roast in oven until cauliflower is soft & golden.
  4. In another baking tray combine the pistachios, slivered almonds, Marrakesh Magic spices & a generous pinch of salt & dry roast for a few minutes, until the spices are fragrant.
  5. In a large mixing bowl, combine the cooked millet, roasted pumpkin, roasted spiced cauliflower, red onion, nuts, sultanas, goldenberries & chopped parsley. Mix through with clean hands & serve!
