As the weather warms up we’re craving fresh, light & healthy food; this OPEN TUNA BOWL certainly fits the bill! Make it the night before for an easy work day lunch. Be sure to add the GINGER COCONUT SAUCE just before serving to keep the veggies crisp & delicious. Enjoy!


Ginger & Coconut Sauce

  • ¾ cup raw cashews*
  • ½ cup orange juice
  • ½ cup Goodies & Grains organic coconut milk*
  • ¼ cup lemon juice
  • 2 tablespoons Nuilife coconut aminos*
  • ½ teaspoon ground turmeric*
  • 1 clove garlic
  • Thumb-sized knob of fresh ginger root
  • Pinch cayenne*
  • Pinch Himalayan salt*?


  • We used: grated carrot, grated beetroot, grated apple, chopped mint, chopped spring onion, mixed lettuce, shredded red cabbage & chopped tomato. Feel free to make up your own salad!


  • 1 bottle Good Fish tuna*
  • Pinch cracked black pepper*

  • Blitz all sauce ingredients in a high-speed blender, until smooth & creamy.
  • Arrange salad ingredients on a plate & add the tuna chunks. Drizzle with ginger coconut sauce, garnish with cracked black pepper & enjoy!
