Paleo Blueberry & Banana Muffins

We often get customer questions regarding COCONUT FLOUR. It is known to be a little tricky to use, but don’t let this discourage you! Practice makes perfect & we hope these yummy PALEO BLUEBERRY BANANA MUFFINS will give you the confidence you need to experiment with this fantastic alternative flour. This recipe is super easy & all ingredients are available in our shop. Lunchbox treat, anyone?! 


  • ½ cup Goodies’ coconut flour*
  • 1 cup natural almond meal*
  • ½ cup Bob’s Red Mill tapioca flour*
  • 1x banana, chopped
  • 1 cup organic frozen blueberries*
  • ½ cup maple syrup*
  • ½ cup Goodies’ organic coconut oil*
  • ½ cup Goodies’ coconut milk*
  • 3 whole eggs*
  • 2 teaspoon vanilla extract*
  • 1 teaspoon ground cinnamon*
  • ½ teaspoon aluminium free baking powder*
  • Handful of Loving Earth coconut threads, toasted* (for garnish)

  1. Preheat oven to 180°C.
  2. In a large bowl, mix together the dry ingredients, plus the blueberries & chopped banana.
  3. In a second bowl, whisk together the liquid ingredients.
  4. Combine wet & dry ingredients & fold together.
  5. Oil a muffin tray & pour in the muffin batter.
  6. Bake for 20 mins, or until the muffins are set in the middle & golden on top. Be aware, you may need to adjust your oven temperature if your oven runs hot/cold. The key to baking is knowing your oven!
  7. When ready, take muffins out of the oven & leave for a few minutes, before turning out & letting cool on a wire rack.
  8. Top with toasted coconut threads.
