Pineapple Fritters

These PINEAPPLE FRITTERS are the perfect Sunday brunch treat! Made with banana flour & cooked in coconut oil, they’re a guilt-free version of the usual fish & chip shop fare. Did we mention that they taste delicious?!


  • 1 pineapple, skin removed & sliced into rounds
  • ¾ cup banana flour*
  • ¼ cup tapioca flour*
  • 3 eggs*
  • ½ cup milk of your choice*
  • ¼ cup + 2 tablespoons maple syrup*
  • 1 teaspoon vanilla extract*
  • ½ teaspoon baking powder*
  • ¼ teaspoon cinnamon*
  • Pinch Himalayan salt*
  • Goodies & Grains organic coconut oil *
  • 1 cup organic frozen blueberries*

  • In a small bowl, mix together dry ingredients.
  • In another bowl, whisk together the eggs, milk, ¼ cup maple syrup & vanilla extract.
  • Add the wet ingredients to the dry & mix until combined.
  • Heat up a few tablespoons of coconut oil in a small frypan.
  • Dip one piece of the pineapple into the batter to coat & place gently in the frypan. Cook for a few minutes on each side, until golden brown. Remove from pan & set to drain on kitchen paper.
  • Repeat until all pieces of pineapple have been cooked.
  • Stack the pineapple fritters on four plates & drizzle with the blueberry compote.

Blueberry compote:

  • Add the blueberries & 2 tablespoons of maple syrup to a small pan. Heat up gradually over low heat, stirring regularly to prevent the berries from sticking. Cook for a few minutes, until berries are soft. 
  • Eat & enjoy!
