This decadent dessert is surprising, simple & quick to prepare – great for when unexpected guests pop by! There is one crucial element to success though, and that is a quality HIGH SPEED BLENDER! The smooth cashew caramel combines perfectly with crunchy Superfood Granola, and while any garnish can be used; we opted for our Antioxidant Berry Mix plus bee pollen for added colour & nutrition.

Ingredients

  • 10 x Medjool Dates*
  • 2 cups Raw Cashew*s – you can pre-soak these in water for a few hours beforehand to soften them
  • ¼ cup Maple Syrup*
  • 1 cup Water*
  • ¼ cup Coconut Oil*
  • 1 tbsp Mesquite Powder*
  • 1 tbsp Vanilla Extract*
  • Pinch Salt*

Method

  • Blend all ingredients in a high speed blender. You may need to stop & stir the mixture by hand a few times to help it along. You want to get the mixture to a smooth consistency.
