These SALMON & SWEET POTATO CAKES are the perfect fuss-free weekday meal! The combination of spices & coconut BBQ sauce mask the fishy flavour – perfect for picky eaters – while the seeds & baby spinach give a satisfying chewy texture. Enjoy leftovers for lunch the next day!

Ingredients

  • 1 bottle Good Fish Salmon in olive oil*
  • 1 ½ cups roasted sweet potato
  • 2 cups natural almond meal*
  • ¼ cup Bob’s Red Mill tapioca flour*
  • ¼ cup pepitas*
  • ¼ cup sunflower seeds*
  • ¼ cup white sesame seeds*
  • ¼ cup chia seeds*
  • ¼ cup sundried tomato pesto
  • 2 whole eggs*
  • 4 tablespoons Nuilife Coconut BBQ Sauce*
  • 1 tablespoon curry powder*
  • 1 tablespoon turmeric*
  • 2 handfuls baby spinach, chopped
  • Pinch cayenne*
  • Pinch salt*
  • Black + white sesame seeds to coat*

Method

  • Preheat oven to 180°C.
  • Mix together all ingredients in a large bowl. Mould into patties & coat in extra sesame seeds.
  • Place on a baking tray lined with baking paper & cook for 10 mins. Flip over & cook patties for another 10mins on the second side.
  • Enjoy with fresh salad. Great for kids’ (or adults’) lunchboxes!
