Sundried Tomato Pesto Veggie Fritters

We love coconut flour for baking sweets, but it can also be used to make delicious savoury items, such as these SUNDRIED TOMATO PESTO VEGGIE FRITTERS. This dish is quick & simple to make – a perfect ‘go to’ breakfast staple that is as nutritious as it is delicious! Serve with extra veggies & kraut to make a full meal.


  • 3 teaspoons Goodies’ coconut oil*
  • ½ onion, chopped
  • 1 clove garlic, chopped
  • 1 zucchini, grated
  • 1 carrot, grated
  • 3 eggs
  • 1/8 cup Goodies’ coconut flour*
  • 1 tablespoon sundried tomato pesto + extra to serve
  • Pinch salt*

  • Heat 1 teaspoon of the coconut oil in a frypan. Add onion & garlic & cook for a few minutes, until soft.
  • In a bowl, whisk together the zucchini, carrot, eggs, coconut flour, pesto & salt. Add the cooked onion & garlic to this mixture & stir to combine.
  • Heat another teaspoon of oil in the frypan & add large spoonfuls of the mixture to the pan. Press down with the back of a spatula & cook for a few minutes, before flipping & continuing to cook on the second side, until golden brown. Remove from pan & rest fritters on kitchen paper.
  • Add the final teaspoon of coconut oil to the pan & cook remaining batter, as per step 3.
  • Serve fritters with extra sundried tomato pesto. Enjoy!
