Superfood Granola

It’s easy to incorporate goodness into your everyday meals, what better way to start the day than with granola charged with superfoods. Will feed a family for a week!

Ingredients

  • 1 cup Linseeds, ground (you can do this in a coffee grinder OR use ready-made linseed meal)*
  • 2 cups Pepitas*
  • 2 cups Sunflower Seeds*
  • 1 cup Sesame Seeds*
  • 1 cup Coconut chips*
  • ½ cup Currants*
  • ½ cup Goji Berries*
  • ½ cup Cacao nibs*
  • ¼ cup Chia seeds*
  • ½ cup Maple syrup*
  • ¼ cup Coconut oil, melted*
  • 1 teaspoon Alcohol-free vanilla extract*
  • 1 tablespoon Cinnamon*
  • 1 tablespoon Mesquite powder*
  • 1 tablespoon Maca powder*

Method

  1. Preheat oven to 180°C.
  2. Mix all ingredients – except goji berries, chia seeds & coconut chips – in a large bowl.
  3. Spread granola out on two large baking trays & bake for 15 – 20 mins or until golden, stirring once while cooking. Cool on trays before adding goji berries, chia seeds & coconut chips. Stir to combine. Enjoy with your favourite milk &/or yoghurt. Store in an airtight container.
