Sweet Muesli Spelt Slice

We think the kids are going to love this one! This decadent SWEET SPELT SLICE celebrates texture, with chewy chunks of chocolate, dried fruit & nuts. It also uses SPELT FLOUR, which is a great alternative to modern wheat flour. It is more nutritious & more easily digested than its commercialised cousin & makes a wonderful, light, nutty slice.  


  • 2 cups spelt flour*
  • 1 cup macadamias, chopped into large chunks*
  • 1 cup pecans, chopped into large chunks*
  • 1 cup coconut threads*
  • 10 medjool dates, chopped*
  • ½ cup currants*
  • ½ cup quinoa flakes*
  • ¼ cup chia seeds*
  • 1 cup Coco Quench*
  • ½ cup coconut sugar*
  • 1/2 cup coconut oil*
  • ½ cup mesquite*
  • 200 grams Loving Earth chocolate, chopped*
  • 1 teaspoon vanilla extract*
  • ¼ teaspoon baking powder*
  • Pinch Himalayan salt*
  • 1 tablespoon bee pollen (as garnish) *

  1. Preheat oven to 180°C.
  2. Combine the spelt flour, macadamias, pecans, coconut threads, dates, currants, quinoa flakes, chia seeds, coconut sugar, mesquite, HALF of the chocolate, baking powder & salt in a large bowl.
  3. In a separate bowl, whisk together the Coco Quench, coconut oil & vanilla extract.
  4. Pour the wet mixture into the dry mixture & stir until combined.
  5. Press the slice batter firmly into a lined baking tray & put into the oven. Let bake for 20 minutes, or until the slice is golden brown on top.
  6. Let cool & cut into bars. Melt down the remaining chocolate & drizzle over bars. Sprinkle with the bee pollen.
  7. Store slice in the fridge.
