Flaked Quinoa Porridge

Warming Bean & Quinoa Casserole

This time of year we look forward to hearty, warming dishes that fill the belly! This rustic-style BEAN & QUINOA CASSEROLE hits the spot with a hum of heat & plenty of veggies & protein to keep the whole family satisfied. Make a double batch & enjoy leftovers during the week.

Ingredients

  • 2 tablespoons extra virgin olive oil*
  • 1  brown onion
  • 2 cloves garlic
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 1 red capsicum, sliced
  • 1 green capsicum, sliced
  • 1 aubergine, coarsely chopped
  • 1 teaspoon chilli powder*
  • 4 veggie stock cubes*
  • 1 tablespoon tomato paste*
  • 1 bottle (700g) passata*
  • 1 cup red quinoa*  (see below for instructions on how to cook quinoa)
  • 2 cans mixed beans*
  • Handful baby spinach

Method

  1. Sauté the onion & garlic in olive oil. Add the chilli powder & sauté for a further minute.
  2. Add the carrots, zucchini, capsicums & aubergine. Turn the heat to low & let the vegetables sweat for 10 mins, stirring occasionally.
  3. Add the tomato paste, passata, stock cubes & water. Let simmer on the stovetop (lid on) for 40 minutes, stirring occasionally. Take the lid off, add the cooked quinoa & beans & cook for a further 5 mins. Season to taste & stir in the baby spinach just before serving.
  4. TO COOK QUINOA:
  5. Rinse quinoa & add to a large saucepan of boiling water. Let simmer for 10-12 minutes, or until quinoa is soft. Drain the liquid; your quinoa is now ready to use!
